Purpose:

As a community driven NFP health program, to achieve our goals we need to inspire people through food. The food on the retreat is critical to creating ongoing familiarity with healthy options and motivation to stick at it despite the challenges.

The Head Chef is critical in the planning and preparing the meals ahead of time (where possible) and managing the kitchen at the retreats. Our menus surround traditional Yolngu food rules, focusing on whole foods, high nutrient density - vegetables, meats, and nuts. There is a hunting component so retreats to fresh fish and bush foods will be incorporated when possible.

Location:

The HFH Program is based in Galiwin’ku (Elcho Island), an Aboriginal Community in the North East Arnhem Land Region of the Northern Territory. This location is geographically remote, for most purposes accessible by aircraft only. Flights will come through Darwin, typically there is one flight in a day.

Position Location & Timing:

The Head Chef position will be located in Galiwin’Ku prior to and after the retreats (July and September). Through August you will be at retreats on homelands at Dharawa.

This is a 3 month position commencing at the start of July.

Timeline:

  • July - Food prep in Galiwin’Ku + retreat set up
  • August - Retreats, 2 x 12 day retreats for approximately 70pax
  • Sept - Intensive in-community program including cooking classes

Key Duties:

  • Work with nutritionists, cofounder and management to plan retreat and workshop menus
  • Order from local suppliers in Darwin (who manage farmers) well ahead of time to ensure fresh from farm produce is available for retreats
  • Manage and prepare broths, snacks and other ‘freezeables’ ahead of retreats at Hope for Health kitchen, working with local staff
  • Run retreat kitchen. Daily food prep and kitchen management will align with retreat menu, staff meals, prepacked meal option (for people who may need to go away for day), blended meal option according to dietary needs, RDO’s.
  • Menu adjustments according to hunting trips
  • Utilise local bush foods (primarily fish and meats)
  • Incorporate traditional and local cooking methods (Utilise local Yolngu skills) such as ground oven, and open fire methods.
  • Organise rosters and manage all kitchen staff through retreat
  • Maximise the use of Local Yolngu staff, working with their capabilities and instructing in new skills when appropriate.
  • Helping HfH team in other aspects of program when not occupied by kitchen duties, infrastructure set up, cooking workshops, marketing and content creation

Position Requirements:

  • Commercial kitchen experience (2 years)
  • Familiarity with whole food, sugar free, grain free and dairy free recipes, typically low-carb
  • Experience managing kitchens and menus
  • Experience teaching
  • Catering for 60 + people per day
  • Bush kitchen set up during retreat - prep done in commercial kitchen in town.

Remuneration:

  • $60K-70k pro rata + super
  • Return Flights
  • Accommodation and overheads - great chance to save.
