Head Chef - Wildbark

Woodlands and Wetlands Trust

Wildbark at Mulligans Flat is looking for a professional and innovative Chef to be responsible for managing all kitchen operations. Wildbark will be an environmentally conscious kitchen using mainly locally sourced and low mileage foods. The successful candidate will also need to deliver an excellent guest experience within one of the most exciting new tourism/ sanctuary locations in the ACT.

The successful candidate will be able to forecast, plan and manage all food orders, staff rostering, menu design and costing. Wildbark will also be a location for weddings and other large events (ie conferences) so experience with catering for large events would be ideal. The goal is to maximise sales and revenue through customer satisfaction and employee engagement to fund conservation work.

Management

  • Liaise with the F&B manager to create and implement policies and procedures to ensure business objectives are met.
  • Communicate business goals to the BOH team.
  • Set targets and goals for the BOH team.
  • Follow up team members to ensure company policies are being followed.
  • Consult with staff and FOH teams to ensure all customer requests for each service are full filled.
  • Manage a budgeted time and attendance system.
  • Manage a payments record system to document payments received and outstanding payments and ensure relevant stakeholder communications.
  • Liaise with the manager to create and implement effective opening, closing and event management procedures.
  • Oversee processes to ensure customer expectations are being exceeded.
  • Oversee the effective use of costing software and systems, auditing quarterly to measure success.
  • Ensure all kitchen employees are portraying a positive company image, following uniform policy.
