About the Role:

The Chef de Partie role at the ASRC Catering Kitchen in North Fitzroy offers an exciting opportunity to work in a dynamic, multicultural environment. You will supervise and mentor a diverse kitchen team, helping to create high-quality dishes from a variety of cultural cuisines.

Your responsibilities will include overseeing food preparation, managing stock control, and contributing to menu development with an emphasis on sustainability, quality, and cultural diversity.

The role also requires strong leadership skills, ensuring smooth operations while maintaining food safety standards and a positive, productive kitchen atmosphere. You will play a key role in fostering continuous learning and improvement within the team.

Key Accountabilities:

  • Monitor Quality: Oversee the preparation and presentation of dishes, ensuring they meet high-quality standards, particularly those developed by other kitchen staff.
  • Stock Control & Orders: Support the management of stock control and assist with ordering to maintain kitchen supplies efficiently.
  • Mentorship & Training: Demonstrate cooking techniques and advise staff on procedures and presentation, fostering a supportive learning environment.
  • Menu Development: Contribute to the creation of innovative menus, considering cultural diversity, sustainability, and ethical food practices, while staying within budget.
  • Hygiene & Safety: Enforce cleaning procedures and ensure compliance with food safety standards (HACCP) and health regulations.
  • Team Management: Direct casual kitchen staff, keeping them engaged, focused, and working to their best ability in a calm and efficient manner.
  • Communication: Maintain regular communication with the Kitchen Manager regarding business operations, staffing, stock control, and kitchen facilities.
  • Operational Efficiency: Implement and refine processes to improve the smooth running of kitchen operations, fostering a culture of continuous improvement and innovation.
  • Legislative Compliance: Ensure adherence to relevant legislation, including The Award, HACCP standards, and Occupational Health and Safety requirements.

Essential Skills, Experience & Qualifications:

  • Formal chef qualification (certificate required)
  • Minimum of 5 years of experience working in a kitchen with strong kitchen operations knowledge
  • Proven ability to supervise, delegate, and train kitchen staff
  • Demonstrated experience in menu planning and implementation
  • In-depth knowledge of HACCP food safety standards and hygiene regulations
  • Exceptional organisational and time management skills
  • Strong attention to detail and focus on food presentation
  • Ability to remain calm under pressure and meet deadlines
  • Full Australian automatic driver’s license

Desirable Skills & Experience:

  • Experience in large-scale catering operations, managing high-volume food production with attention to quality and timing.
  • Ability to handle dietary restrictions, special requests, and customise menus for diverse events or groups.
