Hotel Etico Australia is seeking a passionate and experienced Sous Chef to join our dedicated team in delivering exceptional Italian inspired cuisine with a focus on social impact.

Location: Hotel Etico, 11 Montgomery St, Mount Victoria, NSW, Australia.
Responsibilities:
- Ensure exceptional food quality at every stage, from preparation to presentation, while maximising staff efficiency and cooperation.
- Oversee staff management, including training new team members and directing cooking procedures, including individuals with disabilities.
- Assist the Head Chef in menu planning, food supply ordering, and mise en place preparation.
- Guarantee that the kitchen operates efficiently and meets quality standards.
- Implement stock rotation and food preservation practices to avoid spoilage and prevent stock expiration.
- Maintain kitchen equipment and coordinate necessary repairs.
- Adhere to food control and storage protocols to reduce waste and extend product shelf life.
- Practice and ensure safe use of cleaning chemicals and maintain cleanliness in work areas.
- Understand and comply with Food Safety and OHS standards, ensuring all kitchen staff follow these practices.
- Coordinate with the events and restaurant manager regarding upcoming events and functions.
- Perform additional tasks as needed based on the employee's skills, knowledge, and abilities.
Requirements:

- Certificate/ Diploma in culinary and hospitality management or higher.
- Minimum two years relevant work experience.
- Attention to details.
- Ability to work under pressure.
- Reliable and motivated.
- Team player and strong leadership.
- Good communication and management skill.
- Knowledge in special dietary requirement, food preservation, kitchen workstations (pans, grill, pass, fryer) and stocktaking.
- Knowledge in food safety and OHS work practice.
